Whilst we aim for our menus to impress with their uniqueness and complexity, the foundations of them are simple. Any great meal must begin with great ingredients and given our location, this is a guarantee.
Cornwall’s cornucopia of produce has inspired many and will continue to do so. Locality is at the centre of what we do. We source as much local seafood, meat, and vegetables as we can and this has formed the basis of our offering since our inception.
Being local to the community and having family members working in the year-round Cornish fishing industry, I have always placed an impetus on keeping a close relationship with Cornish suppliers. Their hard work has been the cornerstone of the region’s ever-growing culinary scene since its beginnings, and it is cardinal that we recognise them and honour them with the dishes that we produce.
Sustainability is key to our mission and our belief that local is king. The road less travelled, in rather literal terms, is something that I consider to be central to my ethos. With the vast array of ingredients that Cornwall produces, why would we need to go any further?
